The experienced couple behind Lemon and Thyme can be found among some of the most prominent residents of the Mooloolaba Esplanade, bringing the locals and visitors great food and making word of mouth take care of the rest. For 10 years, Tex and Kellie have made impressions with their passion for high quality service standards and their current restaurant Karma waters Restaurant has ranked in the top 3 best restaurants in Mooloolaba for 5 consecutive years. The couple have also been acknowledged as people’s choice in the Entertainment Book and Lonely Planet.
Many years ago they established Mulu Char at Maroochydore and successfully brought a sophisticated steak house to the Coast. This high calibre restaurant enabled the couple to fulfill the dream of bringing the best of Africa to the Sunshine Coast. Having successfully showcased the best steakhouse on the Coast, the couple sold to concentrate on other ventures.
Now, Lemon and Thyme is the most personal venture yet. Completely restoring a very tired venue into a refreshing and dynamic space! The couple have gone as far as personally building tables and sewing aprons!
With over 20 years of experience streaming through his veins, Tex is a totally hands-on operator and confident knowledgeable leader. Winner of the prestigious 2004 NSW North Shore Regional Barista Championship, Tex knows that owning a restaurant is a lot of hard work and you could see him leading the pass in the Kitchen, pumping out the best coffees or having a joke with locals whilst managing a large team. High energy and great sense of humor keeps Tex overseeing his team with dedicated passion.
Tex is complimented by his partner in life and partner in business Kellie. Experienced marketer and Executive PA, her organisational skills keep the restaurants functioning and Tex organised! She has immersed herself in almost all daily restaurant planning, she’s the ideas person who is highly spirited! With a creative eye, Kellie is responsible for the stylish rustic decor, industrial lighting and natural crates adorning the walls. The ultra fresh shades of yellow reflect her bright personality! A compassionate leader, she is passionate about reaching high standards and implementing structure and consistency, making Lemon and Thyme a wonderful restaurant experience and a place that is unparalleled anywhere on the Coast.
Passion drives the couple who are known to only have one speed in life – fast! Experienced operators having owned 5 other restaurants along the East Coast of Australia and knowledge of the Esplanade ensure that Lemon and Thyme will be truly known as a flagship restaurant on the Sunshine Coast.
manager - SHAWN HICK
Shawn has now been with Lemon and Thyme in shared Manager role, but recently taken over the entire Front of House Management. Shawn has been working with the Teixeira Family Business for many years. Having worked alongside the dynamic couple for 5 years at Karma waters, Shawn gradually stepped up through the ranks proving himself to be a valuable part of the business. His eagerness to learn new facets of the restaurant industry lead Shawn from Karma waters to Lemon & Thyme in a shared Manager role. This recently has changed and now Shawn is fully responsible for the Management of the restaurant alongside the owners and in absence of the Owners. He is well respected by all team members for his experience and strength in guiding them through busy services. His dedication to service quality is at the highest standards having mimicked the values of the operators over the years. His ability to control the restaurant allows the smooth and successful growth of the business.
Supervisor - CANDICE MCKINLEY
Candy is one of the original staff members of Lemon and Thyme and quickly become a staff member to rely on. Her sincere dedication to the business, her customer service standards and simply her work ethics are outstanding.
Candy has been in the role of Supervisor for some time, backing the Managers and Owners with the control of the restaurant. Candy has taken on more of the Function organisation and administration which is keeping all the boys in line! We'll miss Candy when she takes leave to welcome her second baby into the world but know that she'll be back behind the coffee machine pouring brilliant lattes before no time.
